Ingredients

Scale

Main Ingredients

  • 1 block (about 200g) feta cheese
  • 4 large fresh eggs
  • 2 tablespoons olive oil
  • 2 tablespoons fresh herbs (dill, parsley, or thyme)
  • Salt and pepper, to taste

Optional Ingredients

  • 1 cup cherry tomatoes, halved
  • Red pepper flakes or diced jalapeños, for spicy variation
  • Spinach, bell peppers, or mushrooms, for added vegetables
  • Kalamata olives or sun-dried tomatoes, for Mediterranean twist

Instructions

  1. Preheat and Prep Your Oven: Preheat the oven to 375°F (190°C). Lightly grease a small baking dish or an ovenproof skillet with olive oil to prevent sticking and enhance flavor.
  2. Prepare the Feta Base: Place a block or chunks of feta cheese in the center of the dish. Drizzle with olive oil, then scatter fresh herbs and optional cherry tomatoes around the cheese to add natural sweetness and aroma.
  3. Crack the Eggs: Carefully crack the fresh eggs directly around the feta block, spacing them so the whites don’t merge excessively but still bake evenly.
  4. Season and Bake: Sprinkle the eggs and feta with salt, pepper, and any other desired seasonings such as crushed red pepper flakes or dried herbs. Place the dish in the oven and bake for 12-15 minutes until the egg whites are set but the yolks remain slightly runny.
  5. Serve Warm: Remove the dish from the oven and let it rest for a minute to allow flavors to meld. Scoop portions onto plates and serve with crusty bread or fresh greens to soak up the creamy feta and egg mixture.

Notes

  • Choose a quality, well-aged feta for best flavor and baking performance.
  • Use a shallow ovenproof dish or skillet to ensure even cooking of eggs.
  • Monitor the eggs closely after 10 minutes of baking to avoid overcooking; aim for creamy yolks.
  • Let the dish rest briefly before serving to blend flavors and avoid burning your mouth.
  • Add fresh herbs either before baking for infusion or sprinkle on top after baking to brighten the flavor.
