Ingredients

Scale

Protein

  • 1 lb chicken breasts or thighs, boneless and skinless
  • 1/2 cup BBQ sauce (store-bought or homemade)

Vegetables & Herbs

  • 2 medium sweet potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1 bell pepper, sliced into thin strips
  • 1/2 red onion, sliced into thin strips
  • 1/4 cup fresh cilantro or parsley, chopped

Grain Base

  • 1 cup cooked quinoa or brown rice

Optional Toppings

  • 1 avocado, sliced
  • Lime wedges
  • Cheese to sprinkle (optional)

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prep and Roast Sweet Potatoes: Preheat the oven to 425°F (220°C). Cube the sweet potatoes into bite-sized pieces, toss them with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 25-30 minutes, stirring halfway through, until tender and slightly caramelized.
  2. Cook the Chicken: While the sweet potatoes are roasting, season the chicken breasts or thighs with salt and pepper. Grill or pan-sear for about 6-7 minutes per side until cooked through and golden brown. During the last few minutes, brush the chicken generously with BBQ sauce and allow it to simmer for a sticky, flavorful coating.
  3. Prepare the Vegetables: Slice the bell peppers and red onion into thin strips. You can sauté them quickly in a hot pan or enjoy them raw for extra crunch. Chop fresh cilantro or parsley to garnish the bowl later.
  4. Assemble the Bowls: Begin with a base of cooked quinoa or brown rice in each bowl. Add a generous scoop of roasted sweet potatoes, then sliced BBQ chicken strips, and finish with colorful veggies. Drizzle additional BBQ sauce or your favorite dressing on top. Garnish with fresh herbs and optional toppings such as avocado slices or lime wedges.

Notes

  • Choose firm, medium-sized sweet potatoes for even roasting.
  • Do not overcrowd the baking sheet or pan to ensure proper caramelization and browning.
  • Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C).
  • Make extra BBQ sauce for added moisture and flavor customization.
  • Store components separately when meal prepping to maintain texture and freshness.
