Ingredients

Scale

Main Ingredients

  • 300g beef slices (flank steak or sirloin), thinly sliced against the grain
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 2 cloves garlic, freshly minced
  • 1 tsp fresh ginger, minced
  • 2 green onions, chopped
  • 1 tbsp vegetable oil (neutral oil for high-heat stir-frying)
  • 1 tsp cornstarch
  • 3 tbsp water or beef broth

Optional Ingredients

  • Bell peppers or snap peas (for added crunch and color)
  • Sliced chili peppers or chili garlic sauce (for spicy variation)
  • Water chestnuts or cashews (for extra crunch)
  • Fresh cilantro or Thai basil (for garnish)

Instructions

  1. Prepare the Beef: Thinly slice your beef against the grain to ensure tenderness. Toss the slices with cornstarch and a dash of soy sauce to lock in moisture and create a smooth texture when cooked.
  2. Make the Sauce: In a small bowl, whisk together oyster sauce, soy sauce, water or beef broth, and a pinch of sugar to balance savory, salty, and sweet notes.
  3. Stir-Fry Aromatics: Heat vegetable oil in a wok or large skillet over high heat. Add minced garlic and ginger, stir-frying quickly until fragrant but not browned to release their essential flavors.
  4. Cook the Beef: Add the prepared beef slices, spreading them out to sear evenly. Stir frequently and cook until beef is browned but still juicy, about 2 to 3 minutes.
  5. Combine and Finish: Pour the sauce over the beef and toss thoroughly. Let the sauce thicken slightly. Add chopped green onions and any optional veggies, give a final toss, then remove from heat.

Notes

  • Slice the beef thinly for quick cooking and tenderness.
  • Use a very hot pan to sear the beef and develop deep flavors.
  • Do not overcrowd the pan; cook in batches if necessary to avoid steaming.
  • Marinate beef briefly (around 10 minutes) with cornstarch and soy sauce for better texture.
  • Have all ingredients prepped before starting, as stir-frying is a fast process.
  • Store leftovers in an airtight container for up to 3 days; freeze for up to 2 months.
  • Reheat gently with a splash of water or broth to maintain moisture and tenderness.
