Instructions
- Prepare the Filling: Mix the shredded cooked chicken, buffalo sauce, cream cheese, shredded cheese, and chopped green onions in a bowl until well combined and creamy, evenly coating the chicken with the buffalo flavor.
- Assemble the Egg Rolls: Lay an egg roll wrapper on a flat surface with a corner pointing towards you (diamond shape). Spoon about 2 tablespoons of the filling near the corner closest to you. Fold that corner over the filling, then fold in the two side corners and roll tightly towards the far corner. Seal the edge with beaten egg to keep the roll intact.
- Heat the Oil: Pour oil into a deep skillet or pot to about 2 inches deep and heat over medium-high until it reaches 350°F (175°C). Test the oil by dipping an edge of a wrapper; it should sizzle immediately.
- Fry the Egg Rolls: Carefully place the egg rolls in the hot oil in batches to avoid crowding. Fry for 3-4 minutes, turning occasionally, until golden brown and crispy on all sides.
- Drain and Serve: Remove egg rolls with a slotted spoon and place on paper towels to drain excess oil. Let cool for a minute and serve hot with ranch dressing, blue cheese dip, or your favorite sauce.
