Ingredients
Scale
Meat and Vegetables
- 1 lb ground beef (lean or regular)
- 4–5 medium Russet or Yukon Gold potatoes
- 1 medium onion, chopped
Dairy and Sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 can (10.5 oz) cream of mushroom soup or cream of chicken soup
- 1/2 cup milk
- 2 tbsp butter or oil (for sautéing)
Seasonings
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Prepare the potatoes: Peel and slice the potatoes thinly so they cook evenly and layer nicely in the casserole. Parboil them in salted water for about 5 minutes until slightly tender but still firm, then drain well.
- Cook the ground beef mixture: In a skillet, heat butter or oil over medium heat. Add chopped onions and sauté until translucent. Add the ground beef, season with salt, pepper, and garlic powder, and cook until browned and cooked through. Drain any excess fat.
- Mix the creamy sauce: In a bowl, combine the cream of mushroom or cream of chicken soup with milk and half of the shredded cheese. Stir until smooth and creamy, then fold in the cooked ground beef mixture.
- Assemble the casserole: Layer half of the sliced potatoes into the bottom of a greased baking dish. Spread half of the beef and cheese sauce over the potatoes, then repeat the layers finishing with the remaining cheese on top.
- Bake to perfection: Preheat the oven to 350°F (175°C). Cover the casserole with foil and bake for 40 minutes. Remove the foil and bake for another 15 minutes or until the cheese is bubbly and golden brown.
Notes
- Use a mandoline slicer for uniform potato slices to ensure even cooking.
- Drain excess beef fat to prevent the casserole from becoming greasy and heavy.
- Use a mix of sharp cheddar and mozzarella for enhanced flavor and melty texture.
- Do not skip parboiling potatoes; it helps them cook fully without drying out the dish.
- Cover the casserole while baking to keep moisture trapped and maintain creaminess.
