Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts, sliced into thin strips or bite-sized chunks

Vegetables

  • 2 cups broccoli florets (fresh or frozen)

Alfredo Sauce

  • 1 cup heavy cream
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese

Pasta

  • 8 ounces fettuccine (or penne, bowtie, or gluten-free pasta of choice)

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Italian herbs (optional)
  • Olive oil or butter, for cooking chicken

Instructions

  1. Prepare Your Ingredients: Wash and cut broccoli into bite-sized florets. Slice the chicken breasts into thin strips or bite-sized chunks to ensure quick cooking and even seasoning.
  2. Cook the Pasta and Broccoli: Boil pasta according to package instructions until al dente. Add broccoli florets in the last 3-4 minutes of cooking to soften them while retaining their crunch. Drain and set aside.
  3. Sauté the Chicken: Heat olive oil or butter in a large skillet over medium heat. Cook chicken pieces until golden and cooked through, about 5-7 minutes. Remove chicken and keep warm.
  4. Make the Alfredo Sauce: In the same skillet, melt butter and sauté minced garlic until fragrant. Slowly add heavy cream while stirring, then sprinkle in freshly grated Parmesan cheese. Stir continuously until the sauce thickens and becomes silky smooth.
  5. Combine Everything: Return the chicken, cooked pasta, and broccoli to the skillet. Toss gently to coat all ingredients evenly in the creamy Alfredo sauce. Adjust seasoning with salt, black pepper, and Italian herbs if using. Serve immediately.

Notes

  • Use fresh minced garlic for a more fragrant and flavorful sauce.
  • Cook pasta to al dente to maintain texture when mixed with sauce.
  • Grate Parmesan cheese yourself for the best melting quality and flavor.
  • Let the sauce rest off the heat for a minute to thicken further before serving.
  • Season gradually and taste to avoid over-salting, especially due to the salty Parmesan.
