Ingredients

Scale

Protein Base

  • 3 cups cooked shredded or diced chicken

Crunchy Topping

  • 3 cups crushed Nacho Cheese Doritos (reserve half for bottom and half for topping)

Creamy Sauce

  • 1 can (10.5 oz) cream of chicken soup or cream of mushroom soup
  • 1/2 cup salsa or diced green chiles
  • 1/2 cup milk or sour cream

Cheese Blend

  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin

Instructions

  1. Preheat and prep: Preheat your oven to 350°F (175°C). Lightly grease a casserole dish to ensure easy serving and cleaning.
  2. Mix the chicken base: In a large bowl, combine the cooked shredded chicken with the cream of chicken or mushroom soup, salsa or diced green chiles, milk or sour cream, and seasonings (garlic powder, onion powder, cumin). Stir until well blended into a creamy mixture.
  3. Layer the casserole: Spread half of the crushed Doritos evenly on the bottom of the casserole dish to create a crispy foundation. Pour the chicken mixture over the chips and spread it out evenly. Sprinkle the shredded cheese over the chicken mixture, then top with the remaining crushed Doritos for a crunchy crust.
  4. Bake to perfection: Place the casserole in the preheated oven and bake for 25 to 30 minutes, or until the cheese is bubbly and golden and the Doritos have crisped nicely. Let the casserole cool a few minutes before serving to allow the layers to settle and slice cleanly.

Notes

  • Use warm chicken to help flavors combine better.
  • Don’t over-crush Doritos; keep some chunks for texture.
  • Layer the Doritos evenly on top for consistent crunch.
  • Add fresh chopped cilantro or green onions after baking for brightness.
  • If casserole seems too thick, add a splash of milk before baking to keep moist.
