  • 4 oz (115 g) semi-sweet chocolate, melted and cooled slightly
  • 1 cup (240 ml) heavy cream, chilled
  • 1 cup (120 g) powdered sugar

Instructions

  1. Prepare the Brownie Base: Melt the semi-sweet chocolate and butter together in a heatproof bowl over simmering water or gently in the microwave until smooth. Allow to cool slightly. In a separate bowl, whisk together granulated sugar, eggs, and vanilla extract until light and fluffy. Gradually mix in the melted chocolate mixture. Finally, fold in the all-purpose flour and a pinch of salt until just combined. Pour the batter into a lined 8×8 inch baking pan and bake at 350°F (175°C) for 20-25 minutes or until a toothpick inserted into the center comes out with moist crumbs.
  2. Whip the French Silk Topping: While the brownie base cools, beat the chilled heavy cream and powdered sugar together until stiff peaks form. In another bowl, whip the softened butter and melted chocolate until fluffy. Gently fold the whipped cream into the butter and chocolate mixture until smooth and light, forming the mousse layer.
  3. Assemble and Chill: Spread the mousse evenly over the cooled brownie base using a spatula to create a smooth top. Refrigerate for at least 2 hours to allow the mousse to set and the flavors to meld.
