Ingredients

Scale

Cheese

  • Soft, fresh goat cheese rounds or logs (quantity as needed, typically 8-12 oz)

Coating

  • 1 cup panko breadcrumbs (or regular breadcrumbs; gluten-free breadcrumbs if preferred)
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh thyme
  • 1 tablespoon finely chopped fresh chives
  • Salt, to taste (approximately 1/2 teaspoon)
  • Freshly ground black pepper, to taste (approximately 1/4 teaspoon)
  • 1/2 cup all-purpose flour (or gluten-free flour as needed)
  • 2 large eggs, beaten

For Frying

  • Olive oil or vegetable oil, enough for frying (about 1-2 cups depending on pan size)

Instructions

  1. Prepare the herb mixture and coating: Finely chop fresh parsley, thyme, and chives, then combine thoroughly with the breadcrumbs, salt, and pepper in a shallow bowl. In separate shallow bowls, place the flour and beaten eggs to create a classic breading station.
  2. Coat the goat cheese: Carefully slice goat cheese into thick rounds or sticks. Lightly dredge each piece in flour to help the egg adhere, then dip into the beaten eggs. Immediately coat with the herb-breadcrumb mixture, pressing gently to ensure a firm layer.
  3. Chill the coated cheese: Arrange the coated goat cheese on a parchment-lined tray and chill in the refrigerator for 15 to 20 minutes. This helps the coating set so it won’t fall apart during frying.
  4. Fry until golden: Heat enough oil in a pan over medium heat (about 350°F/175°C) to submerge half the coating. Gently place the coated goat cheese in the hot oil and fry for 2–3 minutes per side until a crispy golden crust forms. Avoid overcrowding the pan for even frying.
  5. Drain and serve: Remove the fried goat cheese with a slotted spoon and drain on paper towels to remove excess oil. Serve immediately while warm, optionally with dipping sauces or fresh greens.

Notes

  • Use cold goat cheese for easier handling and better shape retention during frying.
  • Double coat by repeating the egg and breadcrumb steps for extra crunch.
  • Maintain oil temperature at about 350°F (175°C) for an evenly cooked crust without burning.
  • Fresh herbs are preferred over dried for optimal flavor vibrancy.
  • Serve immediately to preserve crispness; the coating softens quickly when cooled.
  • Substitute gluten-free breadcrumbs or crushed nuts to make the recipe gluten-free.
