Ingredients

Scale

Main Ingredients

  • 2 cups mashed potatoes (preferably cooled and firm)
  • 12 eggs (for binding)
  • 1 to cups bread crumbs (or crushed gluten-free crackers/almond flour for gluten-free)
  • Salt, to taste
  • Black pepper, to taste
  • Oil for frying (neutral oil with high smoke point such as vegetable, canola, or sunflower oil)

Optional Add-ins

  • Cheese cubes (mozzarella or cheddar), small pieces for stuffing
  • Fresh herbs like chives, parsley, thyme (finely chopped)
  • Spices like cayenne pepper, smoked paprika, or chili flakes
  • Vegetables such as finely shredded carrots or spinach

Instructions

  1. Prepare the mashed potatoes: Start with fluffy mashed potatoes, preferably homemade or quality instant mashed potatoes. Ensure they are cooled and free from excess moisture for easier shaping.
  2. Mix in seasoning and optional ingredients: In a bowl, combine the mashed potatoes with eggs, salt, pepper, and any optional mix-ins such as cheese, herbs, or spices. Stir well until the mixture is smooth and pliable.
  3. Shape the balls: Using dry hands or a small scoop, form the mixture into uniform balls, pressing firmly to avoid cracks. If adding cheese cubes, insert a small piece in the center before shaping.
  4. Coat with bread crumbs: Roll each ball generously in bread crumbs until fully covered to ensure a crispy exterior.
  5. Fry to golden perfection: Heat oil in a deep pan or fryer to 350°F (175°C). Fry the potato balls in batches for 3-4 minutes until golden brown and crisp.
  6. Drain and serve: Remove the fried balls with a slotted spoon and place them on paper towels to absorb excess oil. Serve warm with your favorite dipping sauces.

Notes

  • Use chilled mashed potatoes for easier shaping and better frying results.
  • Do not skimp on bread crumbs for a crunchy coating and to prevent sogginess.
  • Maintain a consistent oil temperature to avoid greasy or undercooked balls.
  • Dry your hands when shaping to prevent sticking and create smooth balls.
  • Test fry one ball first to check seasoning and oil temperature before frying the entire batch.
