Instructions

  1. Prepare the Potatoes: Wash and halve the baby potatoes. Toss them with olive oil, salt, and pepper until evenly coated. Spread them on a baking sheet and roast at 425°F (220°C) for about 20 minutes, turning halfway through, until golden and crispy.
  2. Cut and Season the Steak: While the potatoes roast, cut the steak into bite-sized pieces. Season generously with salt and pepper to enhance the flavors.
  3. Cook the Steak Bites: Heat a skillet over medium-high heat and melt 1 tablespoon of butter with a splash of olive oil. Add the steak bites in a single layer without overcrowding the pan. Cook 2-3 minutes per side until browned but still juicy inside.
  4. Add Garlic Butter: Reduce heat to medium, add minced garlic to the pan and cook until fragrant, about 30 seconds. Stir in the remaining butter and fresh herbs, letting the sauce melt and coat the steak.
  5. Combine and Serve: Remove the roasted potatoes from the oven and gently fold them into the skillet with steak and garlic butter. Toss until everything is evenly coated. Serve hot, garnished with additional herbs if desired.
