Instructions

  1. Prepare the Filling: Heat a large skillet over medium heat. Add chopped onions and garlic, cooking until softened and fragrant. Add the ground beef, breaking it up with a spoon, and cook until browned and no longer pink. Stir in cumin, chili powder, smoked paprika, salt, and pepper. Add a splash of enchilada sauce to keep the mixture moist and flavorful. Let it simmer for a few minutes until well seasoned.
  2. Assemble the Enchiladas: Preheat oven to 375°F (190°C). Lightly grease a baking dish. Warm tortillas until pliable. Spoon a generous amount of the beef mixture down the center of each tortilla. Sprinkle with shredded cheese, then roll tightly. Place each rolled tortilla seam side down in the baking dish, arranging snugly side by side.
  3. Add Sauce and Cheese: Pour remaining enchilada sauce evenly over the rolled tortillas. Generously sprinkle shredded cheese over the top for a golden bubbly finish.
