Ingredients
Scale
Potatoes
- 2 pounds red potatoes, washed and chopped (with skins on)
Garlic and Herbs
- 4–6 cloves fresh garlic, minced or roasted
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- 2 tablespoons fresh parsley, chopped
Dairy and Seasoning
- 4 tablespoons butter, room temperature
- 1/2 cup milk or cream, room temperature (adjust as needed)
- Salt, to taste
- Black pepper, to taste
Instructions
- Prep the Potatoes: Wash and trim the red potatoes. Chop them into even-sized chunks, leaving the skin on for added nutrition and texture.
- Cook the Potatoes: Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until fork-tender, about 15-20 minutes.
- Prepare the Garlic and Herbs: While potatoes cook, mince fresh garlic or roast whole cloves for a mellow flavor. Chop rosemary, thyme, and parsley and set aside.
- Drain and Mash: Drain the potatoes thoroughly and return them to the warm pot. Add butter, minced or roasted garlic, and a splash of milk or cream. Mash together until smooth but slightly textured. Stir in the fresh herbs and season generously with salt and pepper.
- Adjust and Serve: If the mash is too thick, add more milk gradually to reach desired consistency. Taste and adjust seasoning before transferring to a serving bowl.
Notes
- Use room temperature butter and milk for smooth mashing and better flavor absorption.
- Do not overcook potatoes to avoid mushy texture; cook just until tender.
- Leaving skins on adds color, fiber, and rustic texture.
- Roasting garlic softens sharpness and adds sweetness.
- Always use fresh herbs for vibrant aroma and flavor.
