Ingredients

Scale

Main Ingredients

  • 2 pounds ripe vine-ripened tomatoes, halved or quartered
  • 1 cup fresh basil leaves
  • 4 garlic cloves, whole
  • 1 medium onion, diced
  • 2 tablespoons olive oil, divided
  • 3 cups vegetable or chicken broth
  • 1/2 cup heavy cream or coconut cream (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Roast the tomatoes and garlic: Preheat oven to 400°F (200°C). Toss the halved or quartered tomatoes and whole garlic cloves with 1 tablespoon olive oil and salt on a baking tray. Roast for 25-30 minutes until caramelized and slightly shriveled, enhancing their natural sweetness and adding smoky depth.
  2. Sauté the onions: While the tomatoes roast, heat the remaining 1 tablespoon of olive oil in a large pot over medium heat. Add diced onions and cook until soft and translucent to develop a sweet, flavorful base.
  3. Blend and combine: Transfer the roasted tomatoes and garlic to a blender or food processor. Add fresh basil leaves, sautéed onions, and broth. Blend until smooth and silky. Pour the blended mixture back into the pot and gently reheat over low heat.
  4. Stir in cream and season: Add heavy cream or your preferred creamy alternative to the pot and stir gently. Season with salt and freshly ground black pepper to taste, ensuring a rich and balanced flavor.
  5. Finish and serve: Let the soup simmer for 5-10 minutes to meld flavors fully. Serve hot with optional garnishes such as basil-infused olive oil, grated Parmesan, or toasted croutons, or cool slightly for a refreshing summer dish.

Notes

  • Choose ripe, juicy tomatoes for the sweetest flavor.
  • Don’t skip roasting to deepen the soup’s flavor and sweetness.
  • Add basil after blending to preserve its fresh, bright aroma.
  • Adjust soup consistency by adding more broth if too thick or cream for extra richness.
  • Season gradually to avoid oversalting the soup.
