Ingredients
Scale
Dry Ingredients
- 2 cups whole wheat flour
- 1 cup all-purpose flour
- 1 teaspoon salt
- 2 ¼ teaspoons active dry yeast (1 packet)
Wet Ingredients
- ¾ cup warm water (105-115°F / 40-46°C)
- ½ cup warm milk
- 3 tablespoons honey (divided)
- 3 tablespoons melted butter
Instructions
- Activate the yeast: Mix warm water, 1 teaspoon honey, and active dry yeast in a bowl. Let it sit for 5-10 minutes until frothy and bubbly, indicating the yeast is active.
- Combine wet and dry ingredients: In a large bowl, whisk whole wheat flour, all-purpose flour, and salt. Warm the milk slightly and melt the butter. Add the warm milk, melted butter, remaining honey, and the activated yeast mixture to the flour mixture. Stir until the dough starts to form.
- Knead the dough: Turn the dough onto a lightly floured surface and knead for 8-10 minutes until smooth, elastic, and slightly tacky but not sticky. Add flour as needed if the dough is too wet.
- First rise: Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm spot for 1 to 1.5 hours, or until it doubles in size.
- Shape the rolls: Punch down the risen dough gently. Divide into 12 equal pieces. Shape each piece into a smooth ball and place them in a greased round or square baking pan, leaving space between each roll.
- Second rise: Cover the shaped rolls and let rise for 30-40 minutes until puffy and almost touching.
- Bake: Preheat oven to 375°F (190°C). Bake rolls for 18-22 minutes until golden brown and hollow sounding when tapped. Brush immediately with melted butter for a shiny, soft crust.
Notes
- Measure flour by spooning into the measuring cup and leveling off to avoid dense dough.
- Do not over-knead; knead until dough is elastic but not stiff to keep rolls tender.
- Keep dough rising in a warm, not hot, environment to protect the yeast.
- Use warm liquids around 105-115°F to activate yeast without killing it.
- Brushing butter after baking enhances flavor and maintains roll softness.
