Alfredo Sauce

  • 2 cups chicken broth
  • 3 garlic cloves, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Italian seasoning or fresh herbs (optional)

Instructions

  1. Sear the Chicken: Season chicken breasts or thighs with salt, pepper, and Italian seasoning. Set Instant Pot to sauté mode and melt butter. Brown the chicken on both sides until golden to lock in flavor, then remove chicken from pot.
  2. Add Garlic and Broth: Add minced garlic to the melted butter and sauté for about 30 seconds until fragrant. Pour in chicken broth and scrape the bottom of the pot to lift browned bits, preventing burn warnings.
  3. Layer the Pasta: Break fettuccine pasta in half if needed and spread evenly over the broth. Layer the browned chicken on top without stirring to keep pasta from sticking to the bottom.
  4. Pressure Cook: Seal the Instant Pot lid and set to manual high pressure for 7 minutes. After cooking, perform a quick pressure release carefully to avoid overcooking the pasta.
  5. Make the Alfredo Sauce: Remove chicken and set aside. Stir heavy cream, butter, and freshly grated Parmesan into the pasta. Let the residual heat thicken the sauce. Slice the chicken and return it to the pot, mixing gently to combine all ingredients in creamy sauce.
