Ingredients

Scale

Proteins & Dairy

  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Vegetables & Aromatics

  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 3 cups fresh spinach leaves

Liquids & Oils

  • 2 tablespoons olive oil
  • 1 cup chicken broth

Seasonings

  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Step 1: Sear the Chicken – Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in the Instant Pot on the sauté setting. Brown the chicken on both sides for 3-4 minutes each until golden. This seals in juices and enhances flavor.
  2. Step 2: Sauté the Aromatics – Remove the chicken and add minced garlic and chopped sun-dried tomatoes to the pot. Stir for about 1 minute until fragrant but not burnt.
  3. Step 3: Pressure Cook the Chicken – Return the chicken to the pot, pour in chicken broth. Seal the lid and pressure cook on high for 8 minutes to ensure tender, juicy chicken.
  4. Step 4: Prepare the Creamy Sauce – Once pressure is released, remove the chicken again. Stir in heavy cream, Parmesan cheese, and fresh spinach into the pot. The residual heat will wilt spinach and thicken the sauce.
  5. Step 5: Combine and Serve – Return the chicken to the pot, coat it with the creamy sauce, stir gently, and let it rest for a couple of minutes before serving to meld the flavors.

Notes

  • Brown chicken before pressure cooking to enhance flavor and lock in moisture.
  • Deglaze the pot thoroughly after sautéing by pouring in broth slowly and scraping the bottom to prevent burn errors.
  • Add fresh spinach last to preserve its color and texture.
  • Allow the dish to rest a few minutes after cooking for better flavor integration.
  • Adjust seasoning at the end as cream and cheese mellow salt levels.
