Ingredients
Scale
Filling
- 4 cups fresh tart apples (such as Granny Smith), peeled, cored, and diced
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves (a pinch)
- 1 tablespoon lemon juice
- 2 tablespoons melted butter
Crust and Topping
- Pie crust dough (homemade, pre-made, or gluten-free) enough for about 20 mini pies
- 1 egg, beaten (for egg wash)
Instructions
- Prepare the Apple Filling: Peel, core, and dice the fresh apples into small chunks. Toss them with brown sugar, ground cinnamon, nutmeg, cloves, and a squeeze of fresh lemon juice to keep the color bright and enhance flavor. Add melted butter and mix well to combine.
- Roll Out the Pie Crust: On a lightly floured surface, roll out the pie crust dough to your desired thickness. Use a round cookie cutter to cut the dough into small circles, sized to hold the filling comfortably.
- Fill and Assemble: Place a spoonful of the spiced apple mixture in the center of each dough circle. Top each with another small dough circle or create a lattice pattern. Press the edges firmly to seal the pies.
- Apply Egg Wash and Vent: Brush each mini pie with beaten egg wash for a golden finish when baked. Cut small vents on top of each pie to allow steam to escape during baking.
- Bake to Golden Perfection: Preheat oven to 375°F (190°C). Bake the mini pies for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
Notes
- Keep all ingredients, especially butter and dough, cold for flakier crusts.
- Use tart apples like Granny Smith to hold shape and balance sweetness.
- Do not overfill the pies to prevent leaking during baking.
- Seal edges well by pressing firmly with fingers or a fork to avoid bursting.
- Keep an eye on baking time; mini pies bake faster than full-sized ones.
- For vegan pies, substitute butter with coconut oil and use plant-based dough.
- For gluten-free pies, use gluten-free pie crust dough and ensure spices are gluten-free certified.
