Description

This One Pan Garlic Butter Steak Bites and Potatoes recipe combines tender seared steak, crispy golden potatoes, and rich garlic butter into a quick, flavorful skillet meal. Perfect for busy weeknights or cozy weekends, it delivers restaurant-quality taste with minimal cleanup and ready in under 30 minutes.

Ingredients

Scale

Steak Bites

  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • Salt, to taste
  • Black pepper, to taste

Potatoes

  • 1 lb Yukon Gold or baby potatoes, washed and cut into bite-sized pieces
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Garlic Butter Sauce

  • 3 tbsp unsalted butter
  • 3 cloves fresh garlic, minced
  • 2 tbsp fresh parsley or thyme, chopped

Instructions

  1. Prep the Potatoes: Wash and cut the potatoes into bite-sized pieces, then pat them dry thoroughly to ensure maximum crispiness. Toss the potatoes with olive oil, salt, and pepper. Begin roasting them in a hot pan over medium-high heat until they develop a golden crispy exterior and are tender inside.
  2. Cook the Steak Bites: While potatoes roast, season steak bites with salt and pepper. Push potatoes to the side of the pan, add the steak bites, and sear over medium-high heat. Cook until browned on all sides but still juicy inside, about 3-4 minutes depending on thickness.
  3. Make the Garlic Butter Sauce: Reduce heat to low and add butter and freshly minced garlic directly into the pan. Stir continuously to combine with steak drippings, forming a rich, aromatic garlic butter sauce that coats the steak and potatoes.
  4. Combine and Finish: Mix potatoes and steak bites together evenly in the pan, coating all pieces with the garlic butter sauce. Sprinkle chopped fresh herbs over the top, let meld on low heat for another minute, then remove from heat and serve immediately.

Notes

  • Let steak come to room temperature before cooking for even searing.
  • Ensure potatoes are completely dry before cooking to achieve crispiness.
  • Do not overcrowd the pan; leave space between steak pieces to prevent steaming.
  • Use fresh minced garlic for a brighter, sharper flavor.
  • Let steak rest for a few minutes after cooking to keep juices locked in.
