Ingredients
Scale
Meat and Aromatics
- 1 lb ground beef or Italian sausage
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
Base and Seasoning
- 1 (28 oz) can crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper, to taste
Noodles and Greens
- 4 oz uncooked broken lasagna noodles
- 2 cups fresh spinach or kale
Cheeses
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup freshly grated Parmesan cheese
Instructions
- Brown the Meat and Sauté Aromatics: Heat a large pot over medium-high heat. Add ground beef or Italian sausage and cook until browned and fully cooked. Stir in finely chopped onion and minced garlic, cooking until fragrant and translucent.
- Add Tomatoes, Broth, and Herbs: Pour in the canned crushed tomatoes and chicken or vegetable broth. Stir in dried basil, dried oregano, salt, and pepper. Bring the mixture to a gentle boil to develop a flavorful base.
- Incorporate Noodles and Simmer: Carefully add the broken lasagna noodles to the pot, stirring to separate. Reduce heat to medium-low, cover, and simmer for 10–12 minutes until noodles are tender and have absorbed some sauce. Stir occasionally to prevent sticking.
- Add Greens and Cheese: Stir in fresh spinach or kale and cook just until wilted. Remove the pot from heat and spoon dollops of ricotta cheese into the soup, allowing it to melt smoothly into the broth.
- Serve with Mozzarella and Parmesan: Ladle soup into bowls and top generously with shredded mozzarella and freshly grated Parmesan. Let the cheese melt slightly before serving.
Notes
- Use fresh basil or oregano if possible for brighter flavor.
- Monitor noodle cooking time to avoid mushy pasta.
- Properly brown the meat to deepen flavor and texture.
- Layer cheeses by adding ricotta before serving and topping with mozzarella and Parmesan last.
- Let the soup rest off heat for a few minutes to thicken and develop flavor.
