Instructions

  1. Brown the Meat and Sauté Aromatics: Heat a large pot over medium-high heat. Add ground beef or Italian sausage and cook until browned and fully cooked. Stir in finely chopped onion and minced garlic, cooking until fragrant and translucent.
  2. Add Tomatoes, Broth, and Herbs: Pour in the canned crushed tomatoes and chicken or vegetable broth. Stir in dried basil, dried oregano, salt, and pepper. Bring the mixture to a gentle boil to develop a flavorful base.
  3. Incorporate Noodles and Simmer: Carefully add the broken lasagna noodles to the pot, stirring to separate. Reduce heat to medium-low, cover, and simmer for 10–12 minutes until noodles are tender and have absorbed some sauce. Stir occasionally to prevent sticking.
  4. Add Greens and Cheese: Stir in fresh spinach or kale and cook just until wilted. Remove the pot from heat and spoon dollops of ricotta cheese into the soup, allowing it to melt smoothly into the broth.
  5. Serve with Mozzarella and Parmesan: Ladle soup into bowls and top generously with shredded mozzarella and freshly grated Parmesan. Let the cheese melt slightly before serving.
