Description

One-Pot Taco Spaghetti is a quick and flavorful dinner that combines hearty spaghetti with bold taco seasonings, all cooked in one pot for minimal cleanup. This dish delivers zesty, comforting flavors perfect for busy weeknights, and is easily customizable to accommodate different proteins, veggies, and cheeses.

Ingredients

Scale

Proteins

  • 1 lb ground beef or turkey

Spaghetti Base

  • 8 oz spaghetti noodles (broken in half)

Seasonings & Aromatics

  • 1 packet (about 2 tbsp) taco seasoning (chili powder, cumin, garlic blend)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Liquids & Sauce

  • 1 (14.5 oz) can diced tomatoes with green chilies
  • 2 1/2 cups beef broth or water

Fats & Finishing Touches

  • 2 tbsp olive oil
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Instructions

  1. Sauté the Aromatics and Meat: Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic, cooking until fragrant and translucent. Then add the ground beef or turkey, breaking it up with a spoon, and cook until browned and no longer pink.
  2. Add Taco Seasoning and Tomatoes: Sprinkle the taco seasoning over the meat, stirring thoroughly to coat evenly. Pour in the diced tomatoes with green chilies and mix well to combine the bold flavors.
  3. Pour in Broth and Add Spaghetti: Carefully add beef broth or water to the pot. Break spaghetti noodles in half and scatter them evenly into the pot. Stir gently to ensure the pasta is fully submerged in the liquid.
  4. Simmer Until Pasta is Tender: Cover the pot and simmer on medium-low heat for 12-15 minutes. Stir occasionally to prevent sticking, until the pasta is cooked through and has absorbed the flavors.
  5. Finish with Cheese: Remove the pot from heat and sprinkle shredded cheese over the top. Cover again and let the cheese melt for 2-3 minutes before serving.

Notes

  • Use fresh garlic and onions for the best flavor.
  • Avoid overcrowding the pot to ensure even pasta cooking.
  • Stir gently and regularly to prevent pasta from clumping or sticking.
  • Add extra broth if the pasta isn’t fully cooked before the sauce thickens.
  • Add cheese at the end for gooey topping or earlier for a cheesier sauce.
