Ingredients

Scale

Fish and Seasoning

  • 4 fresh cod fillets (about 6 oz each), firm and thawed if frozen
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon garlic powder

Parmesan Crust

  • 3/4 cup grated Parmesan cheese, freshly grated preferred
  • 3/4 cup panko breadcrumbs (or gluten-free breadcrumbs/ crushed almonds for GF option)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon zest
  • Pinch of salt and pepper

For Coating

  • 2 tablespoons olive oil or melted butter

Instructions

  1. Prepare the Cod Fillets: Pat the cod fillets dry thoroughly using paper towels to remove any excess moisture. Season both sides evenly with salt, pepper, and a sprinkle of garlic powder to build the base flavors.
  2. Mix the Parmesan Crust: In a shallow bowl, combine the grated Parmesan cheese, panko breadcrumbs, chopped fresh parsley, lemon zest, and a pinch of salt and pepper. Toss well to ensure even distribution of all ingredients for a consistently crispy and flavorful topping.
  3. Coat the Fish: Lightly brush the top side of each cod fillet with olive oil or melted butter. This helps the crust brown properly and keeps the fish moist. Press the Parmesan breadcrumb mixture firmly onto the oiled side of each fillet, creating an even, thick crust.
  4. Bake or Pan-Sear: To bake, preheat the oven to 400°F (200°C). Place the cod fillets crust-side up on a baking sheet lined with parchment paper. Bake for 12-15 minutes until the fish flakes easily with a fork and the crust is golden brown. To pan-sear, heat olive oil in a skillet over medium heat. Place fillets crust-side down and cook 4-5 minutes until crisp and golden. Carefully flip and cook another 2-3 minutes until cooked through.
  5. Serve and Enjoy: Transfer the cooked Parmesan Crusted Cod to plates. Garnish with extra chopped parsley and lemon wedges. Serve immediately for the best texture and flavor experience.

Notes

  • Pat dry the fish: Ensure the cod fillets are as dry as possible to help the crust adhere and crisp up.
  • Use fresh Parmesan: Freshly grated Parmesan melts and browns better than pre-shredded cheese.
  • Avoid overcrowding the pan: Give the fillets space when baking or pan-searing to allow for even cooking and a crisp crust.
  • Lemon zest is key: Adds brightness to balance the rich, cheesy crust perfectly.
  • Rest before serving: Let the cooked fish rest for a couple of minutes to retain moisture and enhance flavors.
