Instructions

  1. Prepare the Mixture: In a large bowl, combine the cooked rice, shredded mozzarella, grated Parmesan, marinara sauce, eggs, and Italian seasoning. If using, add diced pepperoni and vegetables. Stir thoroughly to evenly coat every grain of rice and combine all ingredients well.
  2. Preheat and Grease Muffin Tin: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with cooking spray or brush with olive oil to prevent sticking and make removal easier.
  3. Fill Muffin Cups: Spoon the rice mixture into each muffin cup, pressing down gently to form compact and even muffins. Fill each cup almost to the top for nicely shaped bites.
  4. Bake Until Golden: Bake for 20 to 25 minutes, or until the tops are golden brown and the muffins hold together firmly when touched.
