Description

Potato Soup is a creamy, comforting dish made with simple, wholesome ingredients like starchy potatoes, onion, garlic, broth, and dairy. This versatile and hearty soup is perfect for chilly days and can be customized with toppings such as cheese, bacon, and fresh herbs to suit your taste. Easy to prepare and budget-friendly, it provides a warm, satisfying meal that feels like a homemade hug in every bowl.

Ingredients

Scale

Main Ingredients

  • 4 cups diced Russet potatoes (about 4 medium potatoes)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 to 1 1/2 cups milk or cream
  • 2 tablespoons butter
  • Salt, to taste
  • Black pepper, to taste

Optional Ingredients

  • Shredded cheddar cheese, for garnish
  • Crispy bacon bits, for garnish
  • Fresh herbs such as chives, parsley, thyme, rosemary, or dill
  • Sour cream, for serving
  • Cayenne pepper or smoked paprika, for a spicy kick

Instructions

  1. Prepare Your Ingredients: Peel and dice the potatoes into evenly sized cubes for uniform cooking. Finely chop the onion and mince the garlic to maximize their flavor in the soup.
  2. Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and cook until translucent and fragrant, about 5 minutes. Then add the minced garlic and stir for another minute, taking care not to burn it.
  3. Cook the Potatoes: Add the diced potatoes to the pot and pour in enough broth to just cover them. Bring the mixture to a gentle boil, then reduce the heat and simmer until the potatoes are tender, around 15 to 20 minutes.
  4. Blend or Mash: Depending on your texture preference, use an immersion blender to puree the soup until smooth, or mash some of the potatoes while leaving others in chunks for a heartier texture. Stir to combine.
  5. Add Dairy and Season: Stir in the milk or cream until the soup reaches your desired creaminess. Season with salt and pepper to taste. Heat through gently but avoid boiling to prevent curdling of the dairy.
  6. Serve and Garnish: Ladle the soup into bowls and garnish with optional toppings like shredded cheddar, crispy bacon bits, fresh herbs, or a dollop of sour cream to enhance flavor and texture.

Notes

  • Choose Russet potatoes for a creamy, fluffy texture without becoming gluey.
  • Simmer the soup slowly to develop flavors and properly soften the potatoes.
  • Season gradually, tasting as you go to ensure balanced flavor.
  • Use an immersion blender for easy blending and minimal cleanup.
  • Heat gently after adding dairy to avoid curdling.
  • For a vegan version, substitute coconut milk and vegetable broth, and omit butter or use vegan alternatives.
  • Store leftovers in an airtight container in the fridge for up to 3 days; stir before serving as the soup may thicken when cold.
  • Freeze the soup without adding cream; thaw overnight in the fridge and add dairy when reheating.
  • Reheat gently on low heat, adding a splash of milk or broth as needed to restore creaminess.
