Fruit Layers

  • 1 ½ cups fresh strawberries, washed and hulled
  • 1 ½ cups fresh blueberries, washed
  • 1 tablespoon lemon juice (divided, for both fruit layers)
  • 23 teaspoons honey or maple syrup (divided to taste)

Yogurt Layer

  • 1 ½ cups Greek yogurt
  • 12 teaspoons honey (optional, to taste)

  • Popsicle sticks (if not built into molds)

Instructions

  1. Prepare the Strawberry Layer: Wash, hull, and puree fresh strawberries with ½ tablespoon lemon juice and 1-2 teaspoons honey until smooth. Pour the mixture into the popsicle molds to fill about one-third of each mold. Freeze for 30-45 minutes until the layer is partially frozen but not fully solid.
  2. Add the Yogurt Layer: In a bowl, mix Greek yogurt with 1-2 teaspoons honey to taste. Gently spoon the creamy yogurt layer over the partially frozen strawberry layer, being careful to avoid mixing the layers. Freeze for another 30 minutes until the yogurt layer is set.
  3. Create the Blueberry Layer: Puree fresh blueberries with ½ tablespoon lemon juice and 1 teaspoon honey until smooth. Carefully pour the blueberry puree over the frozen yogurt layer, ensuring the layers remain distinct. Freeze the popsicles completely for at least 4 hours or overnight.
  4. Insert Sticks: If your molds do not have built-in sticks, insert popsicle sticks into each mold after the yogurt layer is partially frozen, so they stand upright as the final blueberry layer freezes.
  5. Unmold and Enjoy: To release the popsicles, briefly run warm water on the outside of the molds for 10-20 seconds. Gently pull the popsicles free and enjoy your vibrant Red White & Blue Firecracker Popsicles.
