Ingredients
Scale
Potatoes
- 2 pounds Yukon Gold or Russet potatoes, peeled and chopped
Roasted Garlic
- 2 whole garlic bulbs
- 1 tablespoon olive oil (for roasting garlic)
Dairy
- 4 tablespoons real butter
- 1/2 cup heavy cream
Seasonings
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Roast the Garlic: Preheat the oven to 400°F (200°C). Slice the top off the garlic bulbs to expose the cloves, drizzle with olive oil, wrap tightly in foil, and roast for about 35 to 40 minutes until the cloves are soft and golden.
- Prepare the Potatoes: Peel and chop the potatoes into evenly sized chunks. Place them in a large pot of cold salted water and bring to a boil. Cook until fork-tender, about 15 to 20 minutes.
- Mash the Potatoes and Add Roasted Garlic: Drain the potatoes well and return them to the pot. Squeeze the roasted garlic cloves out of their skins and mash them into the potatoes using a potato masher or ricer.
- Incorporate Butter and Cream: Warm the butter and heavy cream gently, then pour them over the mashed potatoes. Stir thoroughly until the mixture is silky smooth and creamy. Season with salt and freshly ground black pepper to your liking.
- Final Taste and Adjustments: Taste the mashed potatoes and adjust seasoning as needed. For richer flavor, add a little more butter or cream; for lighter texture, add a splash of warm milk.
Notes
- Use Yukon Gold for creamy texture or Russet for fluffier mashed potatoes.
- Roasting garlic transforms its sharpness into a sweet caramelized flavor.
- Warm butter and cream before adding to prevent lumps.
- Avoid food processors to keep the potatoes fluffy, use a masher or ricer instead.
- Add salt gradually and taste often to avoid over-seasoning.
- Optional variations: add grated Parmesan or cheddar, fresh herbs, smoked paprika, or make it dairy-free with olive oil and coconut milk.
- Store leftovers in an airtight container in the refrigerator up to 3 days, or freeze up to 2 months.
- Reheat gently, adding cream or milk to restore creaminess if needed.
