- 1 whole head of garlic, top cut off to expose cloves

Instructions
- Roast the Carrots and Garlic: Preheat the oven to 400°F (200°C). Peel and cut the carrots into chunks. Place the carrot chunks and the whole head of garlic (with the top cut off) on a baking sheet. Drizzle with olive oil, then roast for 25-30 minutes until tender and caramelized.
- Prepare the Garlic: Remove the roasted garlic from the oven and carefully squeeze the softened cloves out of their skins into a food processor or blender. The roasted garlic will have a sweet, mellow flavor.
- Blend Ingredients Together: Add the roasted carrot chunks, tahini, olive oil, lemon juice, salt, and pepper to the food processor. Blend until smooth, gradually adding water a little at a time until the dip reaches your desired creamy consistency.
- Taste and Adjust: Taste the dip and adjust seasonings as preferred — add more salt, lemon juice, or spices if desired. Blend again briefly for a smooth and velvety texture.
