  • 1 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1 small jalapeño or serrano pepper, seeded and finely chopped (optional)

Seasoning & Oil

  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Shrimp: Peel and devein fresh shrimp if necessary. Chop into bite-sized pieces. Place shrimp in a bowl and cover with fresh lime juice. Let marinate for 15–20 minutes, stirring occasionally, until shrimp turn pink and opaque.
  2. Chop Your Veggies: While shrimp marinates, finely dice red onion, tomatoes, jalapeño (if using), and chop fresh cilantro to create a colorful, textured mix.
  3. Combine Ingredients: Drain about half of the lime juice from the shrimp. Add the diced vegetables and herbs to the bowl. Drizzle with olive oil, then season with salt and pepper to taste. Gently stir to blend flavors without bruising the shrimp.
  4. Chill Before Serving: Cover the bowl and refrigerate for at least 10 minutes to let flavors meld and develop. Serve chilled for best taste.
