  • 1 cup heavy cream

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta until just al dente. Drain well, reserving about half a cup of pasta water for later use in the sauce.
  2. Prepare the Shrimp: While the pasta cooks, heat olive oil and butter in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the shrimp and season with salt, pepper, and optional red pepper flakes. Cook until the shrimp turn pink and opaque, about 2-3 minutes per side. Remove shrimp from heat and set aside.
  3. Make the Creamy Scampi Sauce: In the same skillet, pour in the white wine or broth, scraping the browned bits from the bottom to incorporate flavor. Let it reduce slightly, about 2-3 minutes. Stir in the fresh lemon juice, lemon zest, and heavy cream. Add the grated Parmesan cheese, stirring until the sauce is creamy and smooth. If the sauce is too thick, loosen it with reserved pasta water.
  4. Combine Pasta, Shrimp, and Sauce: Return the cooked shrimp to the skillet with the sauce. Add the drained pasta and toss everything together to coat evenly with the creamy sauce. Mix in chopped fresh parsley for color and freshness.
  5. Bake to Perfection: Transfer the pasta mixture into a greased baking dish. Sprinkle extra Parmesan cheese evenly on top. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes until bubbly and golden on top, creating a delicious crust and melding the flavors.
