Description

A comforting and hearty slow cooker casserole combining tender steak, creamy potatoes, and sharp cheddar cheese, perfect for easy weeknight dinners or cozy family meals. This recipe requires minimal prep, delivers rich, cheesy flavors, and can be customized to suit various dietary needs.

Ingredients

Scale

Meat

  • 1 lb sirloin or flank steak, cut into bite-size pieces

Vegetables

  • 1.5 lbs Yukon gold or baby potatoes, sliced into thin rounds
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Dairy

  • 2 cups sharp or extra-sharp cheddar cheese, freshly shredded
  • 1/2 cup sour cream

Liquids

  • 1 cup beef broth

Seasonings

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp dried thyme

Instructions

  1. Prepare the ingredients: Chop the steak into bite-size pieces. Slice the potatoes into thin, even rounds to ensure quick and uniform cooking. Dice the onion and mince the garlic for the flavor base.
  2. Layer in the slow cooker: Place half of the sliced potatoes at the bottom of the slow cooker. Evenly scatter half of the steak pieces, onions, and garlic over the potatoes. Sprinkle a generous amount of shredded cheddar cheese on top. Repeat the layers once more, finishing with a thick layer of cheese on top.
  3. Add liquids and seasoning: Pour the beef broth evenly over the layered ingredients. Spoon dollops of sour cream over the top. Finally, sprinkle salt, pepper, paprika, and thyme evenly to season thoroughly.
  4. Cook low and slow: Cover and cook on low for 6 to 7 hours, until the potatoes and steak are tender and the cheese is bubbling and golden around the edges.
  5. Rest and serve: Turn off the slow cooker and let the casserole rest for about 10 minutes. This resting period allows the layers to set, making it easier to scoop and serve the casserole.

Notes

  • Choose tender cuts of steak like sirloin or ribeye; trim excess fat for best results in the slow cooker.
  • Thinly slice potatoes to ensure even cooking and creamy texture throughout.
  • Don’t skip the resting time after cooking to help the casserole set and improve serving portions.
  • Layer ingredients evenly to avoid dense or undercooked spots in the casserole.
  • Use freshly shredded cheese for better melting and texture compared to pre-shredded varieties.
