Ingredients
Scale
Dry Ingredients
- 2 cups rolled oats
- 1/2 cup chopped nuts (walnuts, almonds, or pecans) – optional
- 1/4 teaspoon salt
Wet Ingredients
- 1/3 cup butter or coconut oil
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
Mix-Ins
- 1 cup mini marshmallows
- 1 cup chocolate chunks (semi-sweet or milk chocolate)
Instructions
- Preheat and Prepare: Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts if using, and a pinch of salt. Stir to evenly distribute the ingredients.
- Melt the Butter and Sweetener: In a small saucepan over low heat, melt the butter (or coconut oil) together with the honey or maple syrup until smooth. Remove from heat and stir in vanilla extract.
- Combine Wet and Dry Ingredients: Pour the melted mixture over the oat mixture and stir well to coat all the oats and nuts thoroughly with the sweet buttery binding.
- Bake the Granola: Spread the mixture evenly onto the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through to ensure even toasting. Watch closely so the granola turns golden but does not burn.
- Add Marshmallows and Chocolate: Remove the granola from the oven and sprinkle mini marshmallows and chocolate chunks evenly over the top. Return to the oven for an additional 3-5 minutes until the marshmallows soften slightly but still hold their shape.
- Cool and Store: Allow the granola to cool completely on the baking sheet; it will crisp up as it cools. Once cooled, break it into clusters and store in an airtight container for freshness.
Notes
- Stir wet ingredients thoroughly into dry for an even coating and crunchy texture.
- Watch baking time carefully to achieve perfectly toasted oats without burning.
- Add marshmallows near the end to avoid burning or excessive crispiness.
- Press granola gently on the baking sheet before baking to encourage chunky clusters.
- Store granola in a cool, airtight container to keep marshmallows from getting sticky and maintain freshness.
