Instructions

  1. Preheat and Prepare: Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts if using, and a pinch of salt. Stir to evenly distribute the ingredients.
  3. Melt the Butter and Sweetener: In a small saucepan over low heat, melt the butter (or coconut oil) together with the honey or maple syrup until smooth. Remove from heat and stir in vanilla extract.
  4. Combine Wet and Dry Ingredients: Pour the melted mixture over the oat mixture and stir well to coat all the oats and nuts thoroughly with the sweet buttery binding.
  5. Bake the Granola: Spread the mixture evenly onto the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through to ensure even toasting. Watch closely so the granola turns golden but does not burn.
  6. Add Marshmallows and Chocolate: Remove the granola from the oven and sprinkle mini marshmallows and chocolate chunks evenly over the top. Return to the oven for an additional 3-5 minutes until the marshmallows soften slightly but still hold their shape.
