Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour (or gluten-free blend)
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup sour cream
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Frying

  • 23 cups neutral oil (vegetable, canola, or peanut), for frying

Optional Toppings

  • Powdered sugar glaze (powdered sugar + milk/vanilla)
  • Cinnamon sugar mixture
  • Melted chocolate for drizzle

Instructions

  1. Prepare the Dough: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, combine the sour cream, eggs, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry mixture and stir until just combined, taking care not to overmix to keep the donuts tender.
  2. Chill the Dough: Cover the dough and refrigerate for at least 30 minutes to firm up, making it easier to roll out and shape the donuts.
  3. Cut the Donuts: On a floured surface, roll the chilled dough to about ½ inch thickness. Use a donut cutter or two round cutters to cut out donut rings. Re-roll scraps to use all dough efficiently.
  4. Heat the Oil: Warm neutral oil in a deep pan or fryer to 350°F (175°C). Maintaining proper temperature helps ensure even frying without greasy donuts.
  5. Fry the Donuts: Carefully place a few donuts into the hot oil, frying without crowding. Flip them after 1-2 minutes when the underside is golden brown, and fry the other side until evenly golden. Remove once cooked through.
  6. Drain and Cool: Use a slotted spoon to transfer donuts to paper towels to drain excess oil. Let them cool slightly before applying toppings.
  7. Add Your Favorite Toppings: While still warm, dip donuts in glaze, dust with powdered sugar, roll in cinnamon sugar, or drizzle with melted chocolate for a delightful finish.

Notes

  • Use room temperature ingredients for best mixing and texture.
  • Avoid overmixing the batter to keep donuts light and fluffy.
  • Maintain oil temperature at 350°F (175°C) for golden, non-greasy donuts.
  • Drain donuts well to keep the exterior crisp.
  • Apply toppings while donuts are warm for better absorption and flavor.
