Description

Strawberry Cheesecake Chimichangas are a delightful dessert that combines creamy cheesecake filling with fresh strawberries, wrapped in a crispy fried tortilla shell. This quick and easy recipe offers a perfect balance of sweet, creamy, and crunchy textures, ideal for a fun after-dinner treat or a crowd-pleasing dessert.

Ingredients

Scale

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, chopped

Assembly & Frying

  • 4 large flour tortillas
  • Butter or oil for frying (about 1/2 cup)

Optional Toppings

  • Cinnamon, for dusting
  • Powdered sugar, for dusting
  • Chocolate sauce or honey, for drizzling
  • Fresh strawberry slices, for garnish

Instructions

  1. Prepare the Filling: Combine softened cream cheese with sugar and vanilla extract in a bowl. Mix until smooth and creamy, then gently fold in chopped fresh strawberries, keeping them intact for bursts of fresh flavor.
  2. Fill the Tortillas: Lay out the flour tortillas flat and spoon a generous amount of the strawberry cheesecake filling onto the center of each, taking care not to overfill to prevent leaking while frying.
  3. Roll and Seal: Fold the sides of the tortilla over the filling, then roll tightly from one edge to the other to form a neat chimichanga shape. Lightly brush the edge with water or a beaten egg to help seal.
  4. Fry Until Golden: Heat butter or oil in a skillet over medium heat. Place chimichangas seam side down first and fry for about 2-3 minutes on each side until golden brown and crispy.
  5. Drain and Serve: Remove chimichangas from the oil and place on paper towels to absorb excess grease. Optionally dust with powdered sugar or cinnamon before serving warm.

Notes

  • Use fresh, ripe strawberries for the juiciest filling.
  • Do not overfill the tortillas to avoid bursting during frying.
  • Fry on medium heat to get a golden crust without burning.
  • Seal tortilla edges well by wetting to keep them closed during cooking.
  • Serve immediately for best texture and taste.
