Ingredients

Scale

Base

  • 1 cup orzo pasta

Salad Mix

  • 1/2 cup sundried tomatoes (preferably oil-packed)
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh herbs (basil or parsley), chopped

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the Orzo. Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions, about 8-10 minutes until al dente. Drain and rinse under cold water to stop cooking and cool the orzo for the salad.
  2. Prepare the Dressing. In a small bowl, whisk together the olive oil, freshly squeezed lemon juice, minced garlic, salt, and black pepper to create a bright, balanced vinaigrette.
  3. Combine Ingredients. In a large mixing bowl, toss the cooled orzo with chopped sundried tomatoes, crumbled feta cheese, and freshly chopped herbs. Pour the dressing over the salad and gently mix until everything is evenly coated.
  4. Chill and Serve. Refrigerate the salad for at least 30 minutes to allow flavors to meld. Before serving, give it a quick stir. Optionally, garnish with toasted pine nuts or whole basil leaves for added texture and presentation.

Notes

  • Use high-quality sundried tomatoes packed in oil for richer flavor and softer texture.
  • Do not overcook the orzo; keep it al dente to avoid mushiness.
  • Add dressing gradually to control moisture and prevent sogginess.
  • Add fresh herbs right before serving to preserve their color and aroma.
  • Taste and adjust seasoning with more lemon juice or salt as needed.
  • Store leftover salad in an airtight container in the refrigerator for up to 3 days.
  • Freezing is not recommended as it affects texture and flavor.
  • This salad is best served cold or at room temperature; if reheating, do so briefly without dressing and then toss with fresh dressing.
