Instructions

  1. Prepare the Ingredients: Slice the chicken breast into thin strips and chop the bell peppers and onion into bite-sized pieces. Mince the garlic and ginger finely to maximize their flavor release during cooking.
  2. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken strips and stir-fry for 4-5 minutes until they are just cooked through and lightly golden. Remove the chicken from the pan and set aside.
  3. Stir-Fry the Vegetables: In the same pan, add the minced garlic and ginger, cooking for about 30 seconds until fragrant. Then add the sliced onions and bell peppers, stir-frying for 3-4 minutes until the vegetables are tender-crisp.
  4. Combine and Sauce: Return the cooked chicken to the pan. Pour in the sweet chili sauce and soy sauce, adding chili flakes if desired. Stir well to coat all ingredients evenly. Cook for another 1-2 minutes to thicken the sauce slightly and warm everything through.
  5. Garnish and Serve: Turn off the heat and sprinkle sliced green onions over the stir-fry. Toss gently and serve immediately over steamed rice or noodles to complete the meal.
