Ingredients
Scale
Meat and Protein
- 1 lb ground beef or turkey
Beans
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
Vegetables
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
Liquids and Oils
- 1 cup beef broth or stock (use gluten-free if needed)
- 2 tbsp olive oil
Spices and Flavorings
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 2 tbsp tomato paste
- Salt, to taste
- Black pepper, to taste
Instructions
- Step 1: Sauté Aromatics and Meat
Turn your Instant Pot to the sauté function. Add olive oil, then cook chopped onions and garlic until soft and fragrant. Add ground beef or turkey and brown it, breaking it up with a spoon to ensure even cooking. - Step 2: Add Spices and Tomato Paste
Sprinkle chili powder, cumin, salt, and pepper over the browned meat. Stir in tomato paste to coat everything and deepen the flavors. Sauté for another minute to let the spices bloom. - Step 3: Combine Remaining Ingredients
Pour in diced tomatoes, drained beans, bell peppers, and beef broth. Stir well, scraping any browned bits from the bottom of the pot to prevent burning during pressure cooking. - Step 4: Pressure Cook
Seal the Instant Pot lid and set it to manual high pressure for 20 minutes. After cooking, allow a natural release for 10 minutes before carefully releasing any remaining pressure. - Step 5: Final Stir and Adjust Seasoning
Open the lid and stir the chili well. Taste and adjust seasoning with additional salt, pepper, or spices as needed. If the chili is thinner than desired, use sauté mode and simmer uncovered for a few minutes to thicken.
Notes
- Brown the meat well to develop deep flavor through caramelization.
- Don’t skip onion and garlic as they provide a flavorful backbone.
- Use natural pressure release to keep chili tender and let flavors meld deeply.
- Drain beans lightly to reduce excess sodium and avoid overly thick chili.
- Adjust spice levels after cooking to control heat easily.
