  • 1 cup (240ml) strong espresso coffee, cooled
  • 4 large egg yolks
  • 3/4 cup (150g) granulated sugar
  • 1 cup (240ml) heavy cream
  • Unsweetened cocoa powder, for dusting
  • 2 tbsp optional liqueur (Marsala, rum, or coffee liqueur)

Instructions

  1. Prepare the Coffee Mixture: Brew a strong pot of espresso or coffee, then allow it to cool to room temperature. Optionally, mix in your preferred liqueur for added flavor and warmth.
  2. Whisk Egg Yolks and Sugar: In a heatproof bowl placed over simmering water, whisk together egg yolks and sugar until the mixture becomes pale and slightly thickened, forming a silky custard.
  3. Combine Mascarpone with Egg Mixture: Allow the egg yolk and sugar mixture to cool slightly, then gently fold in the mascarpone cheese to create a smooth filling.
  4. Whip Cream to Soft Peaks: In a separate bowl, whip the heavy cream until soft peaks form. Fold the whipped cream carefully into the mascarpone and egg mixture to lighten the texture.
  5. Soak Ladyfingers: Quickly dip each ladyfinger into the coffee mixture, soaking just enough to absorb flavor without becoming soggy. Arrange a single layer at the bottom of your serving dish.
  6. Layer and Repeat: Spread half of the mascarpone cream evenly over the soaked ladyfingers, then add another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
  7. Chill and Dust: Cover the assembled tiramisu and refrigerate for at least 4 hours or overnight. Before serving, dust generously with unsweetened cocoa powder using a fine sieve.
