Ingredients

Scale

Main Ingredients

  • 1 lb ground turkey
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 3 tbsp peanut butter
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • 1 tsp chili flakes or sriracha (adjust to taste)
  • Wooden or metal skewers (wooden skewers soaked in water for 30 minutes if using)

Extra Satay Sauce (for serving)

  • 3 tbsp peanut butter
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp lime juice
  • 23 tbsp water (to desired consistency)
  • Optional: chili flakes or honey to taste

Instructions

  1. Prepare the Marinade: In a medium bowl, combine soy sauce, peanut butter, minced garlic, grated ginger, brown sugar, lime juice, and chili flakes (adjust to your preferred heat level). Whisk thoroughly until the mixture is smooth and well blended.
  2. Mix the Turkey: Add the ground turkey to the marinade and gently mix using your hands or a spoon until the meat is fully coated and evenly seasoned. Let it rest for at least 30 minutes to absorb the flavors.
  3. Form the Skewers: Take small portions of the turkey mixture and shape them evenly around the soaked wooden or metal skewers, pressing gently to ensure they hold together during cooking.
  4. Grill the Skewers: Preheat your grill or grill pan to medium-high heat. Cook the skewers for about 4-5 minutes on each side until fully cooked through and nicely charred on the edges. The internal temperature should reach 165°F (74°C).
  5. Prepare Extra Satay Sauce: While the skewers cook, make an additional batch of peanut satay sauce by mixing peanut butter, soy sauce, lime juice, water to reach desired consistency, and optional chili or honey to taste. Serve the sauce freshly warmed or at room temperature alongside the skewers.

Notes

  • Soak wooden skewers in water for at least 30 minutes to prevent burning during grilling.
  • Watch the grill carefully and avoid overcooking to keep the turkey juicy and tender.
  • Use fresh garlic and ginger for the best flavor in the marinade.
  • Handle the turkey mixture gently when shaping the skewers to avoid dense or tough texture.
  • Prepare extra satay sauce for dipping or drizzling—it enhances the flavor and presentation.
