Vegetables
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 2 medium tomatoes, chopped
- 1 cup green beans, trimmed and cut into bite-sized pieces
- 1 medium zucchini, chopped
Liquids & Broth
- 4 cups vegetable broth
- 1 tablespoon olive oil
Herbs & Seasonings
- 1 teaspoon fresh thyme or parsley, chopped (or combination)
- Salt, to taste
- Pepper, to taste
Instructions
- Prepare Your Veggies: Wash and chop all vegetables into uniform bite-sized pieces to ensure even cooking.
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking for 3 to 5 minutes until softened and fragrant.
- Add Hard Vegetables: Add chopped carrots and celery to the pot. Stir occasionally and cook for about 5 minutes until they start to soften and release their natural sweetness.
- Incorporate Tomatoes and Broth: Add chopped tomatoes and pour in the vegetable broth. Bring the mixture to a gentle simmer and let it cook for about 10 minutes to allow flavors to meld.
- Add Tender Vegetables and Herbs: Stir in green beans, zucchini, and fresh herbs. Continue simmering for another 8 to 10 minutes, until all vegetables are tender and vibrant.
- Season and Serve: Taste and adjust seasoning with salt and pepper as desired. Give the soup a final stir, then ladle into bowls and enjoy hot, optionally with crusty bread.
Notes
- Use the freshest vegetables possible for the best flavor and texture.
- Choose a good quality vegetable broth to enrich the soup’s base.
- Do not overcook vegetables; keep them tender but not mushy.
- Layer flavors by sautéing aromatics first and seasoning gradually.
- If soup is too thick, add water or broth to achieve desired consistency.
