Instructions

  1. Prepare the Meat Mixture: Brown the ground beef in a large skillet over medium heat, breaking it up as it cooks. Once nearly cooked through, drain any excess grease. Stir in taco seasoning and a splash of water, allowing the spices to meld thoroughly.
  2. Add Veggies and Beans: Mix in the diced onions, bell peppers, and refried beans. Cook together for a few minutes until the vegetables soften slightly and blend well with the meat.
  3. Layer the Casserole: Grease a baking dish and spread half of the crushed corn chips evenly on the bottom. Pour the meat and bean mixture over the chips. Top with the remaining crushed chips and sprinkle a generous layer of shredded cheese over everything.
  4. Bake Until Bubbly: Preheat the oven to 350°F (175°C). Bake the casserole for 15-20 minutes or until the cheese is melted, bubbly, and golden in spots.
