Description

Tomatillo Avocado Salsa is a fresh, vibrant, and creamy salsa that perfectly balances the tangy tartness of tomatillos with the smooth richness of avocado. Ideal for dipping chips, topping tacos, or adding a burst of freshness to summer gatherings, this easy-to-make salsa is nutrient-rich, versatile, and packed with bright green flavor.

Ingredients

Scale

Main Ingredients

  • 68 tomatillos, husked and rinsed
  • 1 ripe avocado, coarsely diced
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño or serrano pepper, sliced (seeds removed for less heat)
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt, or to taste

Instructions

  1. Prepare the tomatillos: Remove the husks from the tomatillos and rinse them thoroughly under cool water to eliminate any sticky residue. Roughly chop them to prepare for blending.
  2. Chop the other ingredients: Coarsely dice the ripe avocado, chop fresh cilantro, slice the jalapeño (removing seeds if milder heat is desired), and finely chop the red onion for a balanced salsa texture.
  3. Combine everything: Place the tomatillos, avocado, jalapeño, cilantro, red onion, and fresh lime juice in a food processor or blender. Pulse gently a few times until reaching your preferred consistency, whether chunky or smooth.
  4. Season and adjust: Add salt to taste and blend or stir once more. Adjust lime juice or jalapeño heat to your preference before transferring the salsa to a serving bowl.

Notes

  • Choose ripe avocados that are creamy and soft but not overly mushy for the best texture.
  • Rinse tomatillos thoroughly to avoid any bitterness or sticky texture from their husks.
  • Remove jalapeño seeds to reduce heat, or leave some seeds for more spice.
  • Use fresh lime juice as bottled lime juice can alter the bright flavor.
  • Serve the salsa immediately or chill for an hour to let flavors meld and improve the taste.
  • Store leftovers in an airtight container with plastic wrap pressed onto the surface to minimize avocado browning, and consume within two days.
  • Avoid freezing as avocado texture changes when frozen.
